The Role

Faisalabad Serena Hotel is hiring an Executive Chef to supervise and administer all phases of kitchen operation, including food purchase, preparation, menu planning and staff supervision, and to produce high-quality food at a cost level consistent with management objectives.

•Be present at all peak periods to supervise •Directly supervise all employees engaged in kitchen operations, including the staff cafeteria, and maintain good labour relations and legal hygiene requirements •Supervise food preparation, cost, quality, quantity, inventories, portion control, menu planning, recipes and testing of samples submitted by Purchasing •Establish and supervise job methods and cooking standards to maintain high quality of food and service •Personally inspect each item during lunch and dinner to ensure presentation and quality meet established standards •Plan the daily table d'hôte menus with the Food & Beverage Manager and review all other menus quarterly •Develop new cooking methods and keep abreast of new developments in food and equipment •Train kitchen staff according to schedules •Interview and hire applicants, set up work schedules and job requirements •Prepare inventories, budgets and forecasts, and report on daily payrolls, overtime, absenteeism and accidents •Complete market lists, order necessary items and inspect meat, fish and vegetables received from the markets •Develop standard recipes for all dishes to ensure portion control, uniformity of taste and quality •Make requisitions for daily food supplies to maintain the fastest turnover possible •Analyse daily food sales, butcher's shop reconciliation, food costs and other operational expenses •Ensure payroll and food costs forecast in the fiscal budget are realised and suggest profit improvement ideas •Prepare time sheets and daily personnel reports, and control overtime with approval from the Food & Beverage Manager •Hire, train, discipline and terminate personnel as necessary in cooperation with Food & Beverage and Personnel Office •Ensure compliance with ISO 9001 & 14001 requirements
